Preheat oven to 375°
Mix the following with an electric mixer:
2 cups brown sugar
1 cup vegetable oil
1/2 cup unsweetened almond milk
1 tsp. vanilla
Add:
4 cups oatmeal (not quick cook)
1 3/4 cups brown rice flour
Mix the following with an electric mixer:

1 cup of chopped pecans
1 tsp. of cinnamon
1 tsp. baking soda
1 tsp. baking powder (wheat free)
3/4 tsp. salt

*Mix well with a wooden spoon
Place spoons full of dough onto ungreased cookie sheet. Bake for 8-10 minutes. Cool 10 minutes before removing from pan. Cook on wire rack.
